Pizza Skillet Casserole Recipe

Don't you just hate it when food bloggers attach a mountain of text before a recipe where they fondly recollect a distant fond memory that has some deep connection with this particular dish and why they decided to make it?
So, last weekend, As the sun set, Stephen and I were walking our dog, Cooper. In the distance, it started to rain. As we approached the end of the trail, we realized... just kidding, here's the recipe. I made it because we happened to have all the ingredients it needed and we had to make something for dinner. Bon appetite!
30 MINUTE PIZZA SKILLET CASSEROLE
Prep time: 10 mins
Cook time: 20 mins
Serves: 4 to 6
What you need:
3 tsp - Olive Oil (divided)
4 large flour tortillas (diced into bite-sized squares)
1 small zucchini (diced)
1 small summer squash (diced)
1 small red pepper (diced)
1 small green pepper (diced)
1/2 onion (diced)
2 cloves garlic (minced)
1/2 tsp dried italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 cup tomato sauce
1 cup shredded cheese (whatever kind you fancy)
Chopped fresh basil, red pepper flakes for garnish
How to make it?
Heat a large skillet over medium heat, add 2 tsp of olive oil, diced tortillas squares and cook until browned and slightly crispy. Remove from skillet once done.
Add remaining 1 tsp of olive oil, garlic, and all diced vegetables and cook until veggies have softened and cooked through.
Add the crispy tortilla squares back into the skillet and mix well. Cook for 5 mins
Add tomato sauces, spices and let simmer for 5-7 mins
Add 3/4 cup of the cheese and still until melted. Top with remaining 1/4th cup cheese cover until melted.
Garnish and serve hot!
